| Malfard
produces both red wines and white wines: |
|
|
Château
Malfard’s
reds, in the great tradition of Bordeaux wines, are blends of
different varieties.
The three varieties grown on the estate are Merlot, Cabernet Franc
and Cabernet Sauvignon.
The proportion of each variety found in the final blended vintage
depends on several factors: yields, maturity, healthy grapes,
weather conditions, etc.
Consequently, even though we maintain overall specifics, each
vintage varies from year to year.
Château Malfard’s white wine is blended solely from
the Semillon variety. This grape variety, delicate to harvest,
possesses an intense aroma which is exceptional.
Immediately
after pressing, the Château Malfard white
wine is fermented in brand-new barrels for twelve days. For
4 months, it is stirred on its lees and is the object of careful
monitoring and meticulous care.

| Drinking
our wines: |
|
|
Château
Malfard’s
red wines can be drunk as soon as they are launched on the market.
In
fact, the Bordeaux Superieur classification requires these wines
to be cellared a full year before they are sold. This period,
established by wine producers, is followed by another waiting
period following bottling. Indeed, during the bottling process
the wines undergo various operations from which they must ‘recover’ (transporting,
pumping, filtering, aerating, etc.). It takes three months for
them to recover their serenity and continue to age in our barrel
cellar.
Château
Malfard’s
red wines are also made to be cellared.
The quality of the bottles and corks are proof. To draw maximum
enjoyment, particularly when wines are young (less than
5 years of age), they should be decanted between two hours to as
little as 30 minutes according to their age. The best method is
to gently pour the wine into a truncated-cone shaped decanter (this
can be purchased at : La
maison des Bordeaux et Bordeaux Supérieur – RN89 – Exit
5 – 33750 Beychac et Caillau).This decanter rocks gently
on the table thanks to guests who cannot resist touching it…which
makes the wine breathe. For those who wish to preserve the contents
of an uncorked bottle, we highly recommend a simple vacuum system
(Vacuvin) which removes the air inside the bottle.
